INGREDIENT MARKETS

Bakery Flour
Bookings of bakery flour were light
last week. Prices were lowered with
the exception of soft flour, which was
unchanged.
Most bakers held to the sidelines.
Flour coverage was nearly solid through
December. The only business left to be
done through the year's end was with
distributors, who typically buy supply
only a couple of weeks ahead, and bakers,
who found they had unexpected gaps in
coverage to fill.
The strong cash wheat basis seen in
hard red winter wheat, hard red spring
wheat and soft red winter wheat proved
to be the principal obstacle preventing
bakers from taking a more aggressive
stance toward forward contracting.
Kansas City and Chicago wheat
futures advanced but remained mostly
rangebound. In contrast, spring wheat
futures continued to trend lower and
traded to within 10c of contract lows
posted in early September. Still, spring

grade buyers seemed content with current coverage into 2020.
Millfeed credits strengthened, particularly in nearby positions.
The 2019-20 balance sheet for soft
red winter wheat was the tightest of the
wheat classes. Some cookie-cracker and
specialty bakers, although not the major
companies, have been booking almost
hand-to-mouth in the hope there might
be some relief in coming weeks.
Millers estimated pan bread bakers
have covered about 70% of their flour
needs for January-March with spring
grade coverage at 65% to 75% and soft
flour coverage at about 50%. Secondquarter coverage was estimated at about
35% for pan bread flour, 30% for spring
grades and less than 20% for soft flour.
Mill grind averaged five to six days
ahead of Thanksgiving week. FBN

and shipments of national and regional
brands in the days ahead of Thanksgiving.
Carlot list prices were unchanged.
Orders were steady from the prior
week but higher overall than a year ago,
one manufacturer said, especially for
private label. The increase was attributed to holiday advertising. Sales were
expected to weaken the next three weeks
before ramping up sharply in the middle
two weeks of December on the return of
aggressive yearend holiday promotions.
Private label product in 5-lb bags
generally was featured at $1.09@1.49, but
could be found at some U.S. locations for
as low as 99c. Some mass merchandisers
have kept 5-lb bags of private label at $1.22
for all of 2019. Branded flour was $2.49 for
a 5-lb bag at select Midwest grocery stores
but could be found as low as $1.99.
Private label buyers were for the
most part covered through the crop year
to June-July. Some added a year's worth
of coverage in August. Others limited
forward coverage to six months. FBN

Semolina
Bookings of semolina, durum flour
and granulars were light in the days leading to Thanksgiving week. Prices were
lowered with higher millfeed values the
principal factor in the adjustments.
The price of choice milling hard
amber durum as quoted at the Chicago
rail gateway for delivery beyond was
unchanged at a nominal $8.75 a bu. The
Minneapolis price was $8.45 a bu. Spot offers of durum were lacking. Mills continued to sustain grind by drawing on their
inventories and taking receipt of durum
being delivered against contracts.
Forward sales were "essentially nonexistent" last week, a durum miller said.
With contracting essentially completed
through December, and at about 85%
for the first quarter, few buyers saw any
incentive to extend coverage.
Market participants chiefly were
busy trying to move as much qualitycompromised durum wheat through
export channels before the St. Lawrence
Seaway closed to shipping for the winter.
Durum mill runtimes remained
solid at about six days per week. FBN
