Bakery Flour
Bookings of bakery flour were
light. Prices were mixed. Wheat futures
tumbled, which was the principal reason
for the lower prices of most grades.
Flat pricing drew significant attention and was the predominant mode of
coverage for flour buyers last week. That
came as a surprise to one merchandiser,
who noted "deferred basis isn't anything
to write home about," and millfeed prices
remained below seasonal averages.
There were limited forays into component buys, mostly futures coverage,
as the previous week's slump deepened
as fears of the economic impact of the
spreading coronavirus pressured a broad
array of markets, including wheat.
Mid-size regional bakers and
distributors proved to be the most active
buyers last week. Larger "tier one" bread
bakers, and quick-service restaurateurs
were "all rolled up into the second and
third quarters" and felt less pressing
need to add coverage, a miller said.

Millers noted bakers' flour coverage
was mostly completed through March with
the remainder left to distributors and others
who prefer month-by-month purchasing.
Millers estimated April-June coverage
between 45% and 75% completed, with
pan bread flour coverage leading the way at
about 65% to 80%, spring grades ranging
from 60% to 65%, and soft flour pulling
up the rear. Third-quarter coverage was
estimated up to 50% for spring grades compared with 25% to 40% for pan bread flour.
Estimates for soft flour were less than 20%.
Market participants were discussing
the potential for shortages of enzymes and
enrichments originating in China, epicenter of the global coronavirus outbreak.
"We're not in a danger zone yet," a
miller said. "There's a pretty big safety
stock stateside, so it wouldn't be a concern for a while, but it's looming." FBN

and regional brands of family flour were
struggling to emerge from the winter
malaise last week. Manufacturers noted
a slight increase in orders connected
with home baking for Passover and
Easter, but the bump this year, as in other
recent years, was expected to pale in
comparison to that enjoyed in years past.
Buyers of private label flour, including grocery chains, club stores and other
mass merchandisers, earlier covered
their flour needs through June or July
with a few covered through September.
With Easter less than a month away,
private label flour was priced at $1.22 to
$1.92 per 5-lb bag in different regions while
branded flour was priced at $2.08 to $2.40
per bag, also with regional variations. FBN

Semolina
Bookings of semolina, durum flour
and granulars were light last week. Price
adjustments were minor.
The principal constraint on new
semolina business was the well-covered
status of pasta manufacturers. Semolina
coverage was nearly solid for the first and
second quarters of 2020, and coverage
for July-September was about 50%.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond remained
$8.50 a bu, unchanged. Durum pricing
has been flat for several weeks.
A miller pointed out that the large
carry-ins from the previous two crops
have helped keep durum prices capped
despite the limited milling quality supply
provided by the poor 2019 harvest. But he
added there will be much lower inventories of milling quality durum available to
be carried into the 2020-21 crop year, so
future price direction will hinge largely
on how much durum is planted this year
in the United States and Canada and the
size and the quality of the 2020 crops.
The U.S. Department of Agriculture
indicated the Arizona durum crop was
75% planted and 70% emerged by Feb.
24, slightly ahead of year-ago and fiveyear average paces. The U.S.D.A. rated
the state's durum crop at 73% excellent
and 27% good.
