Bakery Flour
Bookings of bakery flour expanded
last week with a clear emphasis on filling nearby orders from certain sectors
working to meet soaring consumer retail
demand. Prices were raised.
In an evolving marketplace, flour
millers assessed what they could handle
as a wave of customer orders flowed in.
Distributors and bakers receiving flour
by truck appeared to be at an advantage
for increasing orders as rail customers
were limited to how much they can pull
ahead without creating a gap at some
point, a miller said.
Millers were looking at capacity capabilities, wheat supplies on hand, whether
additional supplies would be expedited
and outbound transportation possibilities.
Flour coverage for the second
quarter was approaching 80% for both
pan bread flour and spring grade buyers,
millers said. Soft flour coverage continued to lag at about 65% for April-June
and was not more than 30% completed

brands of family flour continued at a
brisk pace that one miller estimated was
double the normal rate for late March.
Carlot list prices were unchanged
"It's like Christmas and Thanksgiving" in terms of the pace of flour
production, packing and shipping, said
one miller who added an extra shift and
onboarded several full-time workers on a

October-December, spring grades led
coverage at about 40%, nearly double the
coverage taken for other flour grades.
Commercial flour demand was
driven by voracious consumer appetites
for bread, buns and cookies that led to at
least a 35% increase if not more for some

Customers continued to draw on
their semolina, granulars and durum
flour contracts at a rapid clip last week.
Prices were not adjusted in limited forward contracting.
Grocery shoppers continued to clear
shelves of pasta in a rush to stock their
pantries amid uncertainty in the spread
of the coronavirus pandemic.
"Pasta manufacturers who supply
product to supermarkets were going 90
mph while those who supply product to
the restaurants are going zero mph," said
a durum miller whose mill grind was a
solid six days.
"Many mills supply both sectors,"
the miller said. "But the demand for dry
pasta in the grocery stores overwhelms
everything else."
Industry analysts said there were no
shortages of durum, semolina or pasta
products, only logistical issues in supplying grocers and mass merchandisers at
an unprecedented pace for early spring.
"The industry can meet the demand
hands down, it's just a matter of lining
things up," a miller said, noting supply
chain improvement during the second
week of heightened buying patterns
brought on by community lockdown
mandates in cities and states desperate
to flatten the curve of COVID-19.
"There's not really a shortage of anything except surgical masks," he said.
"It's just a matter of getting it from point
A to point B."
The rapid depletion of pasta products at the grocery level left manufacturers concentrating on the execution of
nearby logistics. There was little interest
in extending coverage. Pasta manufacturers earlier covered most semolina
needs through June, 70% of third-quarter needs and around 10% of the OctoberDecember requirements.
Interest in buying or selling durum
wheat remained slim. Producers seemed
to be holding off on fertilizer purchases,
indicating they still were considering
what to plant.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond remained
$8.45 a bu. The Minneapolis price was
$8.15 a bu. FBN
