Bakery Flour
Bookings of bakery flour were limited last week. Prices were raised with
pan bread flour seeing the widest leap.
With flour coverage through the
second quarter nearly completed, at least
on paper, the most pressing activities of
bakers and other flour buyers supplying
the grocery sector included expediting
shipments of contracted flour and booking fill-ins to address gaps opened in
nearby coverage by strong demand.
At the same time, flour demand
from the foodservice sector languished,
leaving some commercial bakers in survival mode. Sales for some bakers supplying quick-service restaurants were off
40% to 50%, a miller said. It was hoped
grocery delivery services being tested
by restaurant chains such as Panera and
Subway may help increase volume.
While few new flour contracts
were concluded last week, especially
with wheat futures on the rebound,
some bakers added forward basis and

Sales and shipments of national and
regional brands of family flour remained
brisk. Carlot list prices were unchanged.
Orders were about double the normal pace for the time of year and even
exceeded a typical fall baking season
week, said a Mid-South miller. His mill
was employing temporary, full-time
employees to meet demand. He expected
extra shifts to continue at least another
20 days, even when demand wanes.

right now, the shelves are empty and the
warehouse is empty, so there's a certain
amount of restocking that will have to
occur," he said.
Flour shelves at some major supermarkets and mass retailers continued to
be cleared of product between deliveries.
"They're still selling the flour about
as fast as we can get it to them," another
flour manufacturer said. "So, we're not
ahead of the game yet and still running
seven days a week to try to keep up."
Indications anecdotally and from
social media were that consumers were
returning to or experimenting with
home baking, a trend that could persist
when stay-at-home mandates are lifted.
"It's got us stressed now, but I'm
hoping in the long run people will realize baking at home isn't too difficult. It's
enjoyable; it smells good; it tastes good.
So maybe we'll end up grabbing some
more home bakers now that this happened." FBN

Semolina
Bookings of semolina, granulars
and durum flour were steady last week.
Enduring demand for pasta products
at the grocery level had manufacturers
drawing heavily on contracted supplies.
Price adjustments were minor.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.45 a
bu. The Minneapolis price was $8.15 a bu.
Following a flurry of spot orders that
boosted operations to seven days for the
first time at one Midwestern location the
previous week, durum grind retreated
to an average of 5½ days due to the long
holiday weekend.
The market was said to be firm on the
front end but was expected to slow down.
Pasta manufacturers extended
coverage last week, mostly adhering to
routine buying timelines. Most were well
covered through June. Third-quarter
coverage expanded to about 75%. Fourthquarter coverage expanded to about 30%.
Interest in durum wheat transactions
remained slim. "So far, the industry has
been able to take care of the demand for
pasta without having to scramble to buy
wheat," a veteran merchandiser said. FBN
