hifts in consumer behavior, driven by the onset
and evolution of COVID-19, have disrupted the
food industry. In this edition of What's Next?, we
take a look at key food consumption trends that
have emerged, creating a new landscape for food
companies to navigate.

The Comfort Food Comeback
Since the onset of COVID-19, there's been a shift to eating at
home, as well as changes to consumer food preferences. Thirtythree percent of consumers say they are eating "comfort" foods
more often,(1) and at retail, childhood favorites are lining carts.(2)

Home Bakers Rise Up
According to Datassential,(1) 42% of consumers are
doing more cooking and baking "from scratch."
With this trend, retail flour sales have increased.
At the end of March, U.S. flour sales were up
154% year-over-year.(3)
Market research has indicated that scratch
cooking and baking have staying power.(4) Food
companies are keeping a pulse to determine
how this will impact their future business.

Pizza Pushes to
the Forefront
When it comes to foodservice, pizza
is faring the best. In March, the pizza
segment experienced an 8% year-overyear traffic decline, the lowest among
restaurant subcategories.(5)
While pizza chains benefit from
early investments in digital ordering
channels, independent pizzerias are
getting creative, offering pizza kits,
detailed cooking instructions and even
adding household items to menus.

Conscious Consumption
While some seek comfort in uncertain times, others look for a
sense of control. Compared to 2019, consumers reported that
they have been purchasing more products that they perceive to be
environmentally sustainable and better for them.(6) Twenty-three
percent said they were buying more natural or organic products,
and 14% said they were buying more "better-for-the-planet"
products.
As consumers continue to react and adapt to the developing
impacts of COVID-19, the trends described above, among many
more, are evolving and must be monitored closely.
