Bakery Flour
Bookings of bakery flour last week
remained limited. Prices were lower.
Millers agreed first-quarter component activity ramped up last week but
differed as to which components were
locked in. One said the lion's share of
component coverage last week was basis.
But from another miller's perspective, recent rallies in wheat futures led buyers to
take first-quarter 2021 risk off the table.
Advances in the deferred spring
wheat basis spurred some bakers to fill
gaps in nearby coverage as spot basis levels
remained more affordable, a miller said.
"For the most part, a lot of foodservice buyers are back to almost normal
and are moving forward with their
contracts," a miller said.
At the same time, distributors, midsize commercial bakers and consumerpackaged goods manufacturers were
filling in coverage for the fourth quarter
based on their own increased orders,
another miller said.

Some component buyers turned their
attention to millfeed as bulk prices ticked
higher for the first quarter in some areas.
Kansas City and Minneapolis basis
levels remained fairly high, and some
bakers held out hope for an autumn slide
that may be unlikely, the miller said.
Solid coverage was the rule through
September for all grades. For OctoberDecember, estimates ranged from 65% to
80% for pan bread flour, 50% to 80% for
spring grades and 60% to 70% for soft
flour. First-quarter 2021 estimates were
in a wide range. Coverage ranged from
10% to 40% for pan bread flour, 10% to
55% for spring grades with soft flour lagging at 10% to 30%. FBN

5-lb bags increased. That was partly on
a fall uptick in routine home dining for
families with school-age children, and
partly on US consumers' hesitancy to
dine in public, a Mid-South miller said.
Manufacturers who package larger
bags for foodservice customers such
as school cafeterias said that type of
business was up from April and May
but lower than normal. The principal
reason was the variety of school district
responses to the coronavirus pandemic.
Most districts specified some portion of
the school week for distance learning,
and some held no in-person classes.
Shelf prices were mostly steady
ranging from $2.49 to $3.25 for 5-lb packages of branded flour at supermarkets.
Private label packages of the same size
could be found for $1.49 to $1.79. FBN

Semolina
New bookings of semolina, granulars and durum flour were limited last
week. Durum mill runtimes were shorter
in the holiday-shortened week but were
expected to average six days through
October. Prices were 10ยข a cwt lower.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.10 a
bu. The Minneapolis price was $7.80 a bu.
Durum prices declined nominally
under pressure during collection of the
crop. Durum growers remained inactive
sellers during the heart of harvest. Most
durum coming off their fields was being
stored on farm or taken to elevators.
Outside of country locations, homes for
durum supplies were hard to come by because pasta manufacturers and durum
millers remained comfortable with supplies in hand.
Pasta manufacturers continued to
draw on semolina contracts at a rapid
pace. Spot market sales were sporadic,
and forward sales inched forward. One
miller estimated pasta makers have
covered 90% of their semolina needs for
the fourth quarter and have taken about
14% coverage for January-March.
The USDA said North Dakota durum
was 71% harvested by Sept. 6. Montana
durum was 75% harvested, ahead of 72%
as the 2015-19 average. FBN
