Blommer develops milk chocolate
with reduced sugar

Blommer Chocolate Co., Chicago,
offers Lyra, a reduced-sugar milk chocolate formulation that conforms to the
standard of identity for chocolate.
Unlike many other reduced-sugar chocolates, Lyra has no alternative
sweeteners or bulking agents and contains
only sugar, chocolate liquor, cocoa butter,
milk, soy lecithin and vanilla. The legal
definitions of chocolate limit sweeteners
to milk sugar and table sugar, or sucrose,
which poses a challenge in developing a
reduced-sugar milk chocolate that meets

the criteria. Blommer developed a formula
that is roughly 50% cocoa mass. A 30gram serving of Lyra milk chocolate has 12
grams of sugar, compared to 16 grams of
sugar in a 30-gram serving of the leading
milk chocolate.
Lyra has a balanced, less sweet flavor
profile that delivers on a milk chocolate
experience and may be used for enrobing,
panning and molding, pairing well with

Food Science, is showcasing an expanded portfolio of cost-effective, clean label ingredient solutions for use across the food, pet
food and personal care industries.
NuTek is the company behind Salt for Life and Beyond
Himalayan sea and mineral salt blends that deliver up to 75%
less sodium and up to 75% more potassium in food recipes and
formulations without impacting taste or functionality.
NuTek's expanded portfolio includes NuXtend, NuSavor and
NuForm. NuXtend relies on fermentation to preserve a food's
shelf life and maintain texture and fresh taste. NuSavor was
developed to enhance flavors without the need for added sodium
and triggers a sensation of richness in savory foods through flavor receptors in the mouth. NuForm is derived from compounds
within the cell walls of plants and may be used as a thickener,
stabilizer and binder. The ingredient helps retain moisture and
enhances the mouthfeel of foods, according to the company.

Ardent Mills, Denver, offers a broad portfolio of organic flours,
grains, pulses, mixes and blends. Its extensive network of family
farms and community mills produces a consistent organic grain
supply.
Since 2016, the company has expanded from 2 organic
milling locations to 16 facilities while Ardent Mills' organic sales
have increased six-fold, said Shrene White, general manager
of The Annex by Ardent Mills. Ardent Mills last July purchased
a certified organic grain elevator in Klamath Falls, Ore. Earlier this year the company acquired the operations of Andean
Naturals, Inc. in Yuba City, Calif. It is the company's first organic,
gluten-free facility where it can clean and pack grains such as
organic quinoa, amaranth, sorghum and millet.
"We believe that the overall organic market will remain
strong," Ms. White said. "In the current environment, we are
seeing consumers desire healthier diets and form new habits like
meal planning and cooking from scratch."
