Bakery Flour
Bookings of bakery flour were limited last week partly on pandemicrelated uncertainty about future demand.
Prices declined modestly or were left unchanged in the case of spring grades.
Customers wrapping up fourthquarter coverage accounted for most of
the activity, millers said. For the most
part, bakers held back from additional
forward purchases, although a few
placed working orders in hope futures
land closer to their targets. Those customers were bakers of doughnuts, pan
bread, biscuits, cookies, crackers and
other products for retail sale.
If tradition holds, one miller said,
a flurry of transactions may be expected
the week of Thanksgiving or the following week as buyers sought to get more
comfortable with first-quarter coverage.
But another said uncertainty surrounding demand in the first winter of the
pandemic may delay coverage extensions, especially by bakers providing
supply to the foodservice sector without
any backup channel into retail goods.
" If you're a finished goods supplier
to a quick-serve restaurant company,
and they shut down, that puts you at risk
of all the bookings you've got set up, " a
miller said. " Some customers are just a
bit hesitant to do what they've done in
the past because of what they experienced at the beginning of this year. "
Bakers overall were dissatisfied
with high basis levels even in the face of
strong futures, which remained elevated
after rallying earlier in the month.
The Kansas City cash wheat basis
strengthened across most of the protein
scale as millers sought to pad wheat
pipelines amid railroad performance
issues slowing applications to contracts.
The Minneapolis basis strengthened
except at the top of the protein scale.
Buyers were pleased with nearby
millfeed credits but felt there was room
for credits to advance near the end of the
first quarter and for April-June.
First-quarter flour coverage estimates
ranged widely by miller, from 35% to 75%
for pan-bread flour, from 30% to 75% for
spring grades, and between 25% and 35%
for soft flour buyers. Spring grade buyers
have taken the most April-June coverage at

of their needs covered for the period, and
cookie-cracker and specialty baker coverage was steady at around 20%. FBN

Family Flour
Sales and shipments of national and
regional brands of family flour were brisk
during what is traditionally a peak week.
Sales for Thanksgiving week were
on par with last year, flour manufacturers indicated. But some noted an uptick
in orders for the week after the holiday.
" Some customers are starting
to become concerned about possible
lockdowns and how this coronavirus is
spiking, " a southern Plains miller said.
" So they're wanting to get ahead of the
game and secure more flour to help with
the Thanksgiving-to-Christmas rush. "
Orders during that period have
come closer to the brisk pace of the weeks
before Thanksgiving, he said.

areas, though perhaps not as aggressive

Bookings of semolina, durum flour
and granulars were limited last week.
Durum mills runtimes were stronger
than in the previous week. Some pasta
makers were stockpiling supply.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.25 a
bu., 5c higher. The Minneapolis price was
$7.95 a bu. The market was seasonally
thin, comprising only three or four rail
cars a week on the spot market. FBN
