Family Flour

Bookings of bakery flour perked up
from the previous week. Prices declined.
Flat pricing flour was a common
feature, although millers said component buyers " bought the dips " in futures
prices to lock in coverage. A fair amount
of activity involved buyers who carry
their own futures shifting them to
millers before contract expiration with
intent to use them in December rather
than roll to March. One miller said most
new futures coverage was near term, but
another noted an uptick in activity for
March, April and May.
" With the recent volatility, big
chains will serve as an influencer, and
their whole cohort will follow with bookings, " one miller said. " Bakers are managing their risk with different suppliers. "
Bakers were reluctant to lock in basis on its own last week. Hard red winter
premiums were at levels rarely seen at
this time of year, a veteran trader noted.
But bakers were excited by flat prices
that hit budget targets, a miller said.
Millfeed credits were seen as
favorable for flour buyers into the
first quarter. But flour demand uncertainty had some suspecting credits may
advance further, and second-quarter
millfeed prices were considered low but
ill-defined.
Buyers from most sectors were
active. Included were large pan bread
bakers, mid-size commercial bakers,
consumer packaged goods manufacturers, distributors and pizza chains.
Manufacturers of frozen and fresh retail
products also took coverage.
Coverage for the current quarter
was for all intents and purposes completed, with the remainder of December
slated for distributors and other handto-mouth buyers. Spring grades and panbread flour led in first-quarter coverage,
and soft flour continued to lag.
For the first quarter of 2021, spring
grade coverage estimates ranged from
50% to 75%. Pan-bread bakers were about
60% covered while cookie-cracker and
specialty bakers were about 50% covered.
For the second quarter, pan-bread buyers
had about 30% of their needs covered
with spring grade coverage between 30%
and 40% and soft flour at about 20%. FBN

Family flour bookings were slower
compared with the frenzied pace of the
run-up to Thanksgiving. Orders were
expected to increase in the two weeks
prior to Christmas.
Total orders for November were
down from the same month in 2019, a
Mid-South miller said. That was attributed to higher-than-expected orders in
September and October.
" Customers didn't want to get caught
flat-footed with an empty warehouse and
product they needed to sell, " he said.
Sales for the fall baking season as a
whole were up around 2% to 5% over the
same period a year ago, which fell below
pre-season expectations.
" It's not as high as we projected, but
up is better than down, " he said.
Flour manufacturers were running
plants full time to prepare for the Christmas push. Private label customers were
covered through early summer.

Bookings of semolina, granulars and
durum flour remained light. Durum mill
runtimes increased compared with the
prior holiday week and averaged 5½ days.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.30 a
bu. The Minneapolis price was $8 a bu.
Pasta manufacturers' orders were
strong through December. Forward coverage
was essentially unchanged from the prior
week at about 85% to 90% for the first quarter and 40% to 45% for the second quarter.
Statistics Canada on Dec. 3 estimated the 2020 Canadian durum crop
at 6,571,000 tonnes, up 437,000 tonnes
from the previous forecast and up 31%
from 5,017,000 tonnes in 2019. FBN
