Bakery Flour
Already extensive first-quarter 2021
coverage took a step forward last week as
bakers tied loose ends. Prices were lowered.
Component work was most common as bakers filled in basis or futures
coverage to wrap up contracts before
leaving offices for Christmas. That
process was taking place earlier than
normal, a miller said.
" A lot of companies that had components on looked to roll things up, which
happens around the holidays as people
go to check out, " he said.
While most of that activity was for
the first quarter, there was limited AprilJune coverage added as well, mostly in
futures as bakers sought to lock in that
component because of recent volatility.
Forward basis activity was minimal.
Millfeed credit activity out forward was
similar, as buyers felt there was room
for higher millfeed values in the second
quarter.
Estimates of bakers' spring grade
coverage in the first quarter ranged
between 60% and 75% among various
flour milling companies queried. Panbread bakers had 65% to 75% of their
needs covered while cookie-cracker and
specialty bakers had about 60% coverage.
Looking to April-June, spring grade coverage increased to 45%, pan-bread bakers
remained at 30%, and cookie-cracker and
specialty bakers remained at 20%.
Wheat flour buyers last week were
from all sectors, including distributors,
consumer packaged goods makers,
frozen cookie dough and pizza crust
manufacturers and bakers of fresh retail
products. Bakers supplying quick-service
restaurants were expected to extend flour
coverage soon. FBN

Family Flour
Sales and shipments of national and
regional brands of family flour last week
were about half of the prior week as
grocery and mass retailer shelves were
fully stocked for the final push of the fall
baking and holiday season.
Family flour manufacturers had
reduced runtimes from the frenetic 24/7
pace of November and early December. A

runtime was merely to make up for a
maintenance issue that took one packing
line down for a time.
For the season to date, orders ranged
from even with 2019 to 5% higher.
Early January may see orders pick up
for restocking. One miller suspected
January-February sales may be up 5%
year over year as consumers continue
to bake at home. As consumers are
vaccinated against the coronavirus, it
was thought March family flour sales
may revert to routine, " or even lower,
since people are tired of eating at home, "
he said.
A small spike in sales prior to Easter
may be expected, one miller said, though
another noted that sales bump hasn't
materialized in the past two years.
Private label buyers' forward coverage
was about 50% for the first quarter with
some coverage into mid-summer. FBN

and durum flour were limited last week.
Semolina prices eased.
The durum wheat market was for all
intents and purposes closed for the rest
of the year, millers said. No buying nor
selling interest was seen, typical for late
December. Continued export demand for
North American supplies, evident in a
sale last week to Tunisia, indirectly supported Chicago values for durum wheat.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond remained
$8.35 a bu. The first-quarter price quoted
at Chicago was $8.45 a bu.
Customer offtake varied. Durum
mill runtimes ranged from five to six
days. One miller said orders had eased
seasonally, but another said there has
been no slowdown yet in a period where
pasta manufacturers traditionally begin
a period of extended downtime.
Outside of smaller week-to-week
buyers, semolina coverage was complete
for the first quarter and at about 55% for
the second quarter. FBN
