Bakery Flour
Bookings of bakery flour were light in
the holiday-shortened week. Prices were
raised in consideration of rallying wheat
futures and easing spot millfeed credits.
Activity was minimal. Some millers
by midweek had sold less than a day's
worth of flour grind. One said nearly all
business was with one customer taking a
second-quarter hedge for their end user.
" People aren't buying right now unless they absolutely have to, " a miller said.
Ideas were bakers were eager to put 2020,
the year of COVID-19, behind them, and
would return to negotiations in January to
rectify short positions for the first quarter.
" With these markets, people have
been layering in more than they have in
years, " he said, " so people are a lot shorter.
They have coverage, but it's only partial. "
Some bakers last week were tying
up loose ends, gathering various components into completed contracts. Buyers
included distributors, mid-size regional
bakeries, and manufacturers of fresh

retail products such as bread, frozen
dough, baking mixes and cookies.
A few buyers early in the week added April-May futures to basis numbers
they had locked in earlier. That activity subsided after wheat futures rallied
significantly at midweek. Surging corn
and soybean futures helped pave the way
for the upward trade in wheat futures.
The most actively traded Chicago wheat
future, on a continuous basis, reached
the highest level in six years.
Millers said soft winter wheat producers recently have been unwilling sellers outside of small volumes comprising
a few truckloads. Farmer sales in hard
red winter wheat and hard red spring
wheat also were light.
As for the millfeed component, bakers were displeased with prices beyond
March. Millfeed values out that far were
ill-defined, partly on a lack of bids and
offers as feed mixers and feedlots were
reluctant to commit to contracts.
Flour coverage levels were little

changed from the previous week. Spring
grades led the first quarter at about 85%
covered, followed by pan-bread flour at
80% and soft flour at 65%. For the AprilJune period, spring grades were at 40%
covered, pan-bread flour remained at
30% and soft flour at about 20%. FBN

Family Flour
Sales and shipments of regional
and national brands of family flour were
limited last week. Carlot list prices were
unchanged.
Orders were limited in the holiday
week that also served as the de facto end
to the fall baking season. Millers expected
an uptick for restocking in early January
before spring doldrums begin, although
the surge in COVID-19 cases may provide
an unseasonable rise in usage.
New business was slim as private
label buyers earlier extended coverage at

Bookings of semolina, durum flour
and granulars were typically light during
the week between Christmas and New
Year's Day. Prices advanced in consideration
of higher durum wheat prices and easing
millfeed credits in the Upper Midwest.
Business was lacking in the final days
of 2020. Pasta manufacturers were mostly
pleased with semolina coverage levels.
The first quarter was essentially covered.
About 50% of second-quarter needs were
covered, and about 15% of prospective
third-quarter coverage has been taken.
Meanwhile, customer offtake remained at a more rapid pace than is typical
for late December. Durum mills averaged
five days of runtime despite the holiday.
The price of choice milling hard amber
durum as quoted at the Chicago rail gateway
for delivery beyond was $8.45 a bu, 10ยข higher. The Minneapolis price was $8.15 a bu.
Durum sales have been limited.
Farmers held tightly to their remaining
supply. There was no yearend rush to sell
supplies as sometimes takes place, and
some producers had other crops to sell if
they wished to do so. Mill demand, while
far from urgent, was deep enough to give
cash durum prices a bit of a boost. FBN
