Bakery Flour
Bookings of bakery flour were steady
last week. Price changes were mixed.
Bakers and other food manufacturers were active in booking the futures
component of flour contracts, millers
said. Buyers were keen on taking advantage of futures prices that have fallen
between 40¢ and 95¢ per bu in recent
weeks. Third-quarter futures were most
common, with the fourth quarter receiving less attention.
Bakers were jolted by a late-week
13@32¢-a-bu surge across most of the
hard red winter wheat basis and were
considering what effect this may have
on their buying strategies in the next
several weeks. Buyers felt there was a
potential upside to millfeed credits in
the third and fourth quarters, a miller
said, and held back in that expectation.
Bakers of sweet snacks for retail,
such as donuts and snack cakes, were
active buyers from one miller. Another
had sales from a wider range of buyers,

including commercial bread bakers,
retailers with their own bakeries, manufacturers of consumer packaged goods
such as cake and bread mixes, and bakers
servicing quick-serve restaurants.
Distributors took relatively light
coverage, which one miller attributed
to increased competition during the
pandemic from some commercial bakers
expanding into the pizza dough space.
Bakers' flour coverage for the second quarter was thought to be between
70% and 75% overall. Pan-bread flour
bakers and spring grade buyers were
close to the top end of that range, while
cookie-cracker and specialty bakers
lagged at about 50%. Fully booked
third-quarter coverage varied widely
by miller. One miller estimated 25%
coverage overall. Another miller held
that pan-bread bakers and spring grade
buyers were neck and neck at 45% while
soft flour users lagged at 25%. OctoberDecember coverage was between 5% and

Family Flour
Sales and shipments of national
and regional brands of family flour were
steady. Bagged flour in 2-lb, 5-lb and 10-lb
packages intended for a potential sales
boost for Easter had mostly gone out to
retailers the prior week, millers said.
While the small-bag retail side was
relatively light, 25-lb and 50-lb bags for
the foodservice and the industrial side
of the business picked up, a Mid-South
miller said. That was attributed to
distributors bringing warehouses back
closer to capacity on increased demand
from restaurants reopening in the Northeast and Mid-Atlantic states.
Private-label customers were mostly
covered through the crop year, and some
slightly beyond the second quarter. FBN

Semolina
Bookings of semolina, granulars
and durum flour expanded last week as
pasta manufacturers worked to meet
calendar goals as the start of the second
quarter drew near. Prices were lower.
Estimations of pasta manufacturers'
semolina coverage varied by miller. One
said the second quarter semolina coverage was essentially completed. Another
said about 80% of second-quarter needs
were met. Third-quarter coverage ranged
from 45% to 55%, and coverage for the
fourth quarter was about 25%
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.85
a bu, unchanged. Durum found little
support from other grains. The European
durum market faded.
" The market needs some buying to
stay at these levels, and I don't know if we're
going to see it, " a Midwest miller said.
Durum sales remained inactive.
Farmers were hesitant in view of dry soils
following a mild winter. In any case, they
were preparing fields with fertilizer, and
ideas were seeding could begin this week
in southwestern North Dakota. The market
awaited the durum acreage estimate in the
US Department of Agriculture's Prospective Plantings report, which will be released
March 31. Durum mills were running up
to 6½ days last week in advance of sharply
curtailed grind the week of Easter. FBN
