Bakery Flour
Bookings of bakery flour expanded
last week as additional bakers brought
coverage levels up to what is regarded as
typical for the season. Prices were raised.
One miller said sales through
Thursday equated to a solid six days'
worth of grind compared with a little
more than four days the previous week.
Prominent buyers included distributors filling out needs for the current quarter
and mid-size commercial bakers who felt
first-quarter coverage was not adequate.
Flat pricing took precedence over
component booking for the most part.
Futures following October rallies had
declined nearly to historical averages for
the date, millers noted. Basis levels were
essentially steady with extremely light
spot market offers to test them. Millfeed
credits were high nearby, but some
buyers were unhappy with April-June
millfeed prices as a percentage of firstquarter prices, a miller said.

As orders began to outpace production,
some manufacturers began to draw on
inventories built up in recent weeks.

grades. For the first quarter of 2021, spring
grade buyers extended their coverage the
furthest although millers' coverage estimates remained in a wide range from 45%
to 75%. Pan-bread flour buyers have taken
between 45% and 65% of coverage for the
period, with cookie-cracker and specialty
bakers lagging at 10% and 50%. April-June
2021 coverage saw significant gains last
week and were estimated at 40% for spring
grades, 35% for pan-bread flour and 20%

rising cases of COVID-19 might boost family
flour sales above normal holiday increases.
"Most customers are expecting
some additional increase with the COVID
scare, but it may not be the big increases
some thought they might see," a southern
Plains flour manufacturer said. "If we
start seeing media stories about shortages, that could scare some people into
going out and starting to hoard again and
we could see a COVID-related spike."
If that were to happen, suppliers were
thought to be in better shape to handle
sharp demand increases than they were in
the spring when the pandemic began.
Flour was being promoted in some
groceries, but not aggressively for now.
Shelf price declines were expected during the next few weeks. Branded flour in
a 5-lb package could be found at metropolitan Midwest groceries for $2.99 next
to private label flour in the same size for
a sale price of $2.49. FBN

Semolina
Bookings of semolina, durum flour
and granulars were limited last week.
Prices changes were minimal.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond was $8.20 a
bu, 5ยข a bu higher.
Durum wheat offers were "hit and
miss, not gone away, but not readily available," a durum miller said. Most mills
were subsisting on applications to considerable contracts completed in advance.
Pasta manufacturers continued to
extend forward coverage at a languid
pace. Millers estimated between 70% and
75% of first-quarter semolina needs were
in the books. For April-June, coverage was
around 45%. A few buyers made minor
forays into the third quarter of 2021.
"The simple answer is the calendar
flipped to November," a miller said. "January-March and even April-June are not far
away anymore. Pasta makers have been
pleased with forward coverage through all
of 2020, so now it's just a matter of extending coverage and staying comfortable."
Demand for pasta was expected to
drop from September and October during the final two months of the year but
remain above average for the date. FBN
