InnovoPro unveils chickpea-based
egg white replacer

chickpea protein, the system is a blend of
dry ingredients for desserts that require
strong and stable foamed egg white, like
meringue and mousse. It may be easily
foamed with water and sugar to create
stiff peaks that are light in color, stable
when baking and capable of maintaining
the same shape and texture of egg-based
applications.
Unlike potato protein, another
InnovoPro, Raanana, Israel, a supplier
of chickpea-based ingredients, launched
CP-FOAM 1001, a functional egg white
replacement system.
Based on the food technology
common alternative, InnovoPro's system
offers a clean taste, eliminating the need
for masking agents, according to the
company. Final products created using CPFOAM
1001 in place of egg whites retain
Two potato starches from
AKFP now in North America
American Key Food Products, Closter, NJ, now offers native
waxy potato starch and pregelatinized native waxy potato starch
to the North American food industry.
Made in Germany, both starches are over 99% amylopectin
and may be used in applications such as fruit fillings, baked
foods, soups and sauces, salad dressings, condiments, snacks
and meat alternatives.
The native waxy potato starch is a cook-up starch, and the
pregelatinized native waxy potato
starch is a cold-swelling pregelatinized
starch. Both are high-viscosity
starches. They have a neutral flavor
profile. The high-gelatinization levels
bring about expansion, creaminess,
smoothness and mouthfeel,
according to the company. They are
used in binding and thickening,
imparting a shiny, clear appearance,
new textures, high viscosity and
extended shelf life.
" This high level of amylopectin is achieved by the breeding
of a potato variety specifically for this purpose, using
traditional techniques, not genetic modification, " said Ivan

performance characteristics with the added benefit of being

Gold&Green Foods launches
protein granules, flakes
Food technology company Gold&Green Foods, Helsinki, Finland,
launched protein granules and protein flakes made from
oat bran, pea and fava bean protein.
The plant-based ingredients have a neutral flavor profile
and texture that may be manipulated to adapt to various applications,
according to the company. They are a good source of
protein and contain fiber, potassium and iron.
The protein granules and protein flakes are shelf-stable and
shown to work in dry snacks like
crackers, cookies, bars, trail mixes,
granola and instant meals, as well
as in formed products such as
burgers, vegetable patties, balls and
falafel. They may serve as a protein
source for plant-based alternatives
to dairy, meat and seafood and as
inclusions in deli salads, baked
