Bakery Flour
Bookings of bakery flour expanded
last week. Prices were mixed, higher in the
case of flour ground from spring wheat.
Spring grade buyers and pan-bread
flour users took the most coverage last
week. But soft flour buyers, especially
those supplying breading for chicken
products at quick-serve restaurants,
locked in a fair amount of flour as well.
" Chicken sandwiches have probably
put breaders' flour usage up 5% to 10%
year over year, " a miller said. " Chicken
sandwich popularity is very real. They're
cannibalizing chicken on the bone, but
they're also eating into burger sales, so
bun volume has not spiked. "
The consumer packaged goods
segment also was an active flour buyer,
millers said. Distributor purchasing
was " so-so, hand-to-mouth, " a miller
said. Ideas were suppliers to quick-serve
restaurants may become more active
this week as they look to stay covered a
quarter out, he said.

Rolling pre-existing futures, basis
and millfeed coverage into finalized contracts
comprised the bulk of business last
week, from one miller's perspective.
" Basis is high, bakers aren't aggressively
covering it, feed is down a
touch, and futures have been just nuts,
extremely volatile, " he said. " Buyers
are tired, worn out, waiting for an even
greater break they are not seeing. "
Millfeed values eased along with
demand due to hotter weather, but bakers
took it as a gift that millfeed prices
remained well above seasonal norms.
Coverage estimates for the third quarter
were about 85% for pan-bread flour,
80% for spring grades and 70% for soft
flour. For October-December, spring grade
and pan-bread flour coverage estimates
firmed at 50% and 40%, respectively,
while soft flour coverage advanced to 25%.
In the first quarter of 2022, spring grade
buyers had covered an estimated 20% of
anticipated needs, followed by pan-bread
flour buyers at 15% and cookie-cracker

Sales of national and regional
brands of family flour remained firmly in
the summer doldrums, millers said.
" It's just that time of year, " a Midwest
miller said. " It's nothing like last year
during the pandemic, just back to normal
usage and sales for early summer. "
Bag sizes from 2-lb to 10-lb comprised
most of the packing last week,
both to accommodate June orders and, for
some, pre-packing for the start of the fall
baking season in a few months' time. An
earlier spurt of orders for flour in larger
bags was no longer a factor. Restaurant
pantries remained well-stocked as postpandemic
sales continued to ramp up.
Private-label flour in a 5-lb package
could be found for $1.22 at Midwest
mass merchants and for $1.77 on grocers'
shelves, where 5-lb branded flour prices
ranged from $2.29 to $3.29. FBN
Semolina
Bookings of semolina, granulars and
durum flour were limited last week. Slow
orders kept durum mills running seasonally
slow, from 4½ to five days. Semolina
prices eased along with durum.
Pasta makers' coverage was nearly
completed for the third quarter and
around 60% for the fourth.
The price of choice milling hard amber
durum as quoted at the Chicago rail
gateway for delivery beyond was $9.75 a
bu, down 25¢ from the previous week.
Farmer interest in selling durum,
which perked up after recent rains in
western North Dakota, was again limited,
so prices were ill-defined. A few spot rail
cars traded in the high-$9 to low-$10-a-bu
range. With durum again at a premium
to hard red spring wheat and concerns
that dry Northern Plains conditions may
eat into yields, farmers may become more
amenable to selling at current prices.
The USDA in Phoenix said Arizona
durum on June 13 was 86% mature (83%
a year earlier, 88% as the 2016-20 average
for the date), 45% harvested (51%, 47%)
and rated the crop 94% good to excellent,
down slightly from the prior week. FBN
