Bakery Flour
The pace of bakery flour bookings
slowed considerably last week. Prices
were narrowly mixed.
Most bakers held to the sidelines,
" holding out for price reductions and
willing to take the risk, " a miller said.
Large bakeries and food manufacturers
earlier squared away flour coverage
through December, and in some
cases, January. Some had futures booked
or handled hedging internally and soon
would need to lock in basis coverage and
millfeed credits to meet internal deadlines
for completing contracts. Other
buyers may continue into 2022 booking
only bits and pieces until the timing is
right for larger volumes, a miller said.
" Customers are chasing supply disruption, "
a miller said. " If it's not wheat
flour, it's oil, it's dextrose, it's any other
ingredient that goes into their production,
and it continues to be an issue. "
The strong cash wheat basis seen
in hard red winter wheat and a 40ยข-abu
hike at 14% protein in the hard red

spring wheat basis supported firm flour
prices, as did Chicago and Kansas City
wheat futures, which reached contract
and multi-year highs during the week.
Flour distributors and other handto-mouth
buyers filled in coverage for the
current quarter where needed. Such sales
totaled two days of grind for one miller.
Several millers primarily contracted
with foodservice directors and bakery
distributors short on flour for the current
quarter. Others said no sales of consequence
were made during the week.
" There was little if any futures bookings
or feedback on quotes, " another
miller said. " Customers will look to buy
spot to close out the year if they need
anything, and the first quarter is pretty
exposed in terms of bookings as buyers
wait to see if the market provides some
relief. "
Meanwhile, orders on contract
were robust across the country, keeping
flour mills running six to seven days
and planning short holiday breaks. At

manufacturers were planning longer
holiday downtime in hope that the ingredient
supply chain will catch up a bit and
afford them unimpeded production after
the holiday.
Slow sales barely moved the coverage
needle, millers said. Current-quarter
coverage was unchanged at 90% for panbread
flour and 75% for soft flour. Spring
grades' coverage ticked up to 85%. In the
first quarter of 2022, estimated coverage
was unchanged at 45% for pan-bread
bakers and spring grade buyers and 30%
for cookie-cracker and specialty bakers.
Soft flour at 15% lagged pan-bread and
spring flour coverage (25% each) for the
April-June period. FBN
Family Flour
Seasonally robust sales and shipments
of national and regional brands of
family flour last week were expected to
pause Thanksgiving week before revving
up again in early December.
Promotions were in place at many
supermarkets and big-box merchandiser,
though most were less aggressive than
in previous baking seasons in view of the
increased carlot list prices announced
earlier this year that compelled many
stores to raise retail prices.
Private label coverage was completed
through December, and most buyers
had a leg up on January-March. FBN
Semolina
New bookings of semolina, granulars
and durum flour were limited last
week. Seasonally robust orders ahead of
expected holiday downtime kept durum
mills grinding six days. Prices eased as
Upper Midwest millfeed edged higher.
The price of choice milling hard amber
durum as quoted at the Chicago rail
gateway for delivery beyond was $18.75 a
bu, unchanged. Elevators took in small
volumes of durum despite unchanged
bids to growers. No durum traded spot.
Millers said pasta manufacturers
were fully covered for the current
quarter. First-quarter 2022 coverage
estimates ranged from 65% to 85%, and
millers said a few customers had taken
" baby steps " on April-June coverage. FBN
