Bakery Flour
Activity was limited last week and
mostly involved bakers filling gaps in
nearby coverage. Advancing spring wheat
futures pushed spring standard patent prices
higher. Pan-bread flour prices weakened
as declining wheat futures offset a stronger
Kansas City basis. Weaker Chicago wheat
futures were offset by a higher basis and
cheaper millfeed prices in select regions,
which sent soft flour prices higher.
Though forward coverage levels were
nearly unchanged, fill-in business was
brisk considering the strengthening hard
red winter and springs basis, a miller said.
One said the equivalent of 1¾ days' flour
grind was sold in the first three days of last
week, led by spring grades.
" The spring wheat flour buyer feels
defeated that pricing is not coming off, " a
miller said. " They've had to accept it. "
Distributors added to nearby coverage,
as did manufacturers of frozen doughs and
upscale pizza crusts and a handful of midsize
commercial bread bakers.

especially the commercial baker, " a miller
said. " The consumer packaged goods
maker has a position, but commercial
bakers have conceded the fact that the
market's up, so they're not going to get
longer than they feel they must. "
An advancing hard red winter wheat
basis discouraged component buying.
Millfeed prices were a mixed bag for bakers,
with values declining in the Upper
Midwest and the Northeast. But good
demand concurrent with a spate of flour
mill downtime boosted values in the
Southwest.
With buyers' focus on covering
nearby needs, quarterly coverage levels
were mostly unchanged. In the current
quarter, pan-bread and spring grades
were 75% covered with soft flour at 60%.
For the first quarter of 2022, spring grade
and pan-bread flour coverage levels were
unchanged at about 40% with cookiecracker
and specialty bakers locked in at
30%. Second-quarter coverage was much
lighter with soft flour at an estimated 15%

Seasonal increases in sales and shipments
of national and regional brands
continued. Carlot list prices were steady.
Millers' warehouse inventories increased,
and supermarket chains and mass
merchandisers added to stockpiles from
which they'll draw to accommodate heavy
consumer demand in November. A central
Plains miller said sales were up 3%-5% from
fall 2019, the pre-COVID benchmark.
" Buyers seem to be loading up a
little earlier than normal, " the miller said.
" They're not necessarily anticipating a huge
increase in sales like they were last year, but
they're filling warehouses a little earlier to
be on the safe side. "
The brisk pace had some packing lines
running 24/7. Smaller operations were running
two shifts for six days. The busy pace
of operation was expected to last through
Christmas with a brief downturn around
Thanksgiving week.
Private label buyers were covered
through December and mostly had some
coverage into the first half of 2020. FBN
Semolina
Bookings of semolina, granulars and
durum flour expanded last week. Prices were
raised as millfeed prices eased.
" Some buyers are resigned to the fact
that the numbers are not going to fall back,
so some are locking in and moving on to
something else, " a miller said.
With fourth-quarter coverage essentially
completed, pasta makers focused on
2022, raising first-quarter coverage to about
20%, millers said.
Pasta manufacturers were thought to
have extensive supplies of finished goods in
warehouses. Orders kept durum mills running
only 4½ days last week.
The price of choice milling hard amber
durum as quoted at the Chicago rail gateway
for delivery beyond was $18 a bu.
Trading was limited as mill pipelines
were well-stocked through December. Durum
offers were generally met by millers
saying their bins were full, but they were
amenable to buying at discounts. FBN
